

These quick pancakes are hassle free one bowl beauties. Gluten free, dairy free, healthy and delicious! If you haven’t used buckwheat flour before it’s perfectly suited to pancakes. And although these have hardly any flour in them, it gives them that structure they need, so they don’t fall apart when you flip them!
In a bowl:
Mash one large, very ripe banana
Add 1 large egg and mix
Add 4 tablespoon of buckwheat flour and mix
Add 1/2 cup rice milk (or any milk) and mix
Add 1/2 teaspoon of baking soda and
sprinkle a pinch of salt. Mix.
Use plenty of coconut oil or butter in a hot pan and flip away! I like to make small pikelet sized ones so they flip easily. Wait till the bubbles have burst before flipping and try not to overcook them. They are most delicious when the banana is still a bit gooey in the middle. These are a great breakfast, lunch box treat or after dinner dessert! I served mine in a stack with yoghurt, honey and a sprinkling of muesli. Delish!
