

Sometimes the best things come about when you’re forced to think outside the square. My 7 year old was desperate to bake a treat today but I’d run out of eggs and (lots of other things, whoops) and we also had to leave the house by 9am to be somewhere!
Lets throw together these yummy things, pop it in the freezer for 10 minutes while we get ready and it’ll great! That’s what I said to him while thinking to myself it would be a crumbly bland mess. Turns out I’ve found a new favourite!
You will need:
1 Tbsp chia seeds
1 tsp mixed spice or cardamom or cinnamon (or all 3 if you like it tasty!)
1 1/2 cups of nuts and seeds such as sunflower, almonds, cashews, flaxseeds, sesame, brazils, hazelnuts and walnuts.
1 cup desiccated coconut
1 1/2 cups rolled oats
Cacao – 1/4 cup
Honey – 1/2 cup (or rice malt syrup)
Coconut oil – 1/2 cup (or butter)
1 tsp vanilla extract
Toast the first 5 ingredients on a baking tray at 150 degrees celsius till the coconut is lightly browned (about 5 minutes). Remove and let cool.
Melt the last 4 ingredients together in a large pot on a low heat, stirring to combine. Remove and let cool slightly before pulsing in the food processor a little.
Add the toasted ingredients to the large pot and stir till its all covered in silky chocolate sauce.
Press into a 17×27 (or close to that) baking tray, making sure it’s tightly compressed with a spatula (it may need wetting). Now you can top it with whatever you like! I used melted dark chocolate, coconut and freeze dried raspberry powder. Store in the freezer and it’s ready to cut a delicious slice after 10 minutes.
