Carrot Cake Bites

If you love carrot cake as much as I do you will really appreciate these little morsels of walnuts, carrot and coconut. I've been having these with a cuppa during the day or after dinner and they are great for the kids lunch boxes too. I keep them in the freezer so they last many weeks, and that way they don't get too warm by lunch time. These are full of fibre from the carrot, coconut and flaxseeds. The nuts and seeds provide protein, healthy fats from and lots of essential minerals such as magnesium and zinc!

Ingredients:

1 cup walnuts
1 cup oats
1/2 cup ground linseeds (available from most supermarkets)
1Tbsp cinnamon
1tsp ground ginger
pinch of salt
1 cup raisins
1 cup dates
2 carrots grated
1/2 cup well squeezed pineapple (fresh or tinned)
1 cup coconut shredded or desiccated (I used desiccated in this batch) plus extra for rolling.

Blitz the first 4 ingredients in a food processor till fine. Add the rest and continue to mix till well combined and a sticky mixture forms. Roll tablespoon sized balls in your palms and finish with a roll around in some extra coconut. Done!

*Keep in the fridge or freezer.
